Tasty Tuesday-Sweet Potato Hummus


I came up with this recipe because we had guests coming to visit. I want to serve something but I didn't have a lot of prep time.

1 pound frozen organic sweet potato
1/4 c organic extra-virgin olive oil
1/4 c organic tahini
1 garlic clove...pressed through garlic press
2 T fresh squeezed lemon juice (organic)
salt to taste

Cook sweet as direction on package, drain and cool. Once the sweet potatoes are cooled, place them along with the olive oil, tahini, garlic, and lemon juice in your food processor and process until a smooth puree is formed, scraping down sides as necessary, about 30 seconds total.

Transfer hummus to serving bowl, drizzle with additional extra-virgin olive oil and serve with Jilz Gluten Free Crackerz
